Eggless chocolate peaut butter cake
« on: July 01, 2014, 03:12:11 PM »
I found a recipe that I modified some and it came out nice and fluffy and delicious.  The cake itself is vegan friendly but I topped it with Cool Whip and with that you would have to find a substitute.

2.25 cups all purpose flour
1.5 cups white sugar
0.25 cup brown sugar
1.5 tsp baking soda
0.5 tsp salt
0.5 cup canola oil
1.5 cups water
1.5 cup vanilla extract (or whatever extract you want to experiment with).
0.5 cup melted peanut butter (creamy)

Preheat the oven to 350 F
Mix the dry ingredients first and then add the wet ingredients to them (excluding PB)
Grease a 9X13 pan (I used a metal one, if you're using glass or a dark pan the time will differ for you...which I won't know what it is, so puzzle it out).
Pour into the pan and place globs of melted PB over the cake and then swirl around with a fork until well distributed.
Bake for 37-40 minutes

Optional - When cool top with Cool Whip, coconut, cherries or other fruit.  Sprinkle cinnamon on top for that touch of class ;)

I hate purity.  I hate goodness.  I don't want virtue to exist anywhere.  I want everyone to be corrupt to the bone.
