My alfredo recipe
« on: May 09, 2015, 10:10:31 PM »
Well...I just made this today, so I figured, why not share it?

I got it from a relative of mine, who said he got it from a restaurant owner.

- 1 Stick Salted Butter
- 1 pint Whipped Cream (NOT whipping cream lol. I used the Land o Lakes brand, but it probably doesn't matter)
- 2 cloves Garlic
- 1/2 teaspoon white pepper
- 3/4 cups grated Parmesan cheese
- 3/4 cups mozzarella cheese

Note that this makes a LOT so you can halve the recipe if you want. (I strongly suggest it unless you're feeding a family, lol. Or are an alfredo fanatic like me who doesn't mind eating it for the next few days. :P )

Here's how to make it:  Melt the butter in a *large* deep pan. While butter is melting, add the minced cloves of garlic to the butter. When butter is all melted, add the whipped cream. Stir and whip to get the cream and the butter to meld together. You can add in the white pepper at this point. Then, *slowly* add in the cheese, a little bit at a time (like, a third of each kind of cheese). You need to whip it all together on LOW heat, making sure that the cheese begins to blend with the cream sauce. note that it takes a while, this is not a quick sauce to make. ;)  When the cheese is nice and melted in and you don't see any cheese chunks, it's done!

if anyone tries it let me know what you think. :P

My favorite pasta types to use with this are Radiatorri, rotini, shells, campanelle, or anything that can kind of "hold in" the sauce.

I also love to add cooked mushrooms (sauteed in a pan with some butter) and cooked chicken breast or thigh pieces. :) but you could also add shrimp, scallops, or whatever!
