Simple easy recipe. I thought this up out at job corps when it was my turn to do bakery for the culinary arts and for the dining facility there.

Basicaly make instant cheesecake. let cool 1 hour. While you are leting that cool make some chocolate chip cookies but dont add any chocolate chips to the recipe. bake the cookies and let them cool. Once they have cooled  scoop out some instant cheesecake and sandwitch between 2 cookies. And enjoy.
