Most people eat pretty normally--but for those of use with gluten-intolerances, lactose-intolerances, vegetarian or vegan tendencies, and a sensitivity to soy or tree nuts--eating can be kind of difficult. I've been messing around with some tasty recipes--just a few of the many I bake for people that work the Ren Faire with me, and so far I've had much success! Below are a few recipes (that I either completely made myself, or completely ripped apart and put back together) that almost anyone can have without having to worry about food allergies or sensitivities.
Gluten-Free, Soy-Free, Nut-Free, Vegan Cornbread
Ingredients:- 1 cup GF flour (Or if it's too expensive and you'd like to make your own, here's a chart my mother found http://sphotos-b.xx.fbcdn.net/hphotos-ash4/297623_506245382723688_1411779473_n.jpg )
- 1 cup yellow cornmeal
- 3 tablespoons sugar (I used dried cane juice)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon coarse grained salt (I've used Kosher and Sea Salts)
- 1 cup rice milk (Or Hemp/Almond/Hazelnut/other nut/seed milks)
- 1/4 cup canola oil (I try to steer away from these, but it doesn't work with much else)
- 1 "egg's worth" (between 1 and 2 tablespoons) of applesauce
Directions:Heat oven to 400 degrees F. Spray a 9-inch square baking pan with non-stick cooking spray (also works with a muffin pan). Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Set aside. In a seperate smaller bowl, whisk together milk, oil, and applesauce. Pour the wet ingredients over the dry and, using a fork, stir until just combined. Do not overmix. Spread batter evenly in pan and bake 20 to 25 minutes, or until a toothpick can be inserted into the center of the dough and be pulled out clean. Cut into triangles or squares, and serve immediately (preferably with fake butter mixed with honey!).
Gluten-Free, Soy-Free, Nut-Free, Corn-Free, Vegan Vanilla Orange Cake
Ingredients:
- 2 1/4 cups GF Flour
- 2 1/4 teaspoons Baking Powder
- 1/2 teaspoon Salt [Kosher or Sea Salt]
- 1/2 cup fake Butter
- 1 1/3 cups Sugar [Dried Cane Juice]
- 1/4 teaspoon Orange Extract (Or Lemon, if you prefer)
- 1 teaspoon Vanilla Extract
- 1/2 cups of Applesauce
- 1 cup Almond/Hemp/Hazelnut/Rice/etc. Milk
Directions:Sift together flour and salt with baking powder. Mash butter until soft and smooth, then gradually blend in 1 cup of sugar. Add orange and vanilla extract. Stir in half of the applesauce and beat vigorously. Stir in the flour mix and milk in three parts, until completely blended. In a separate bowl, pour in the last of the applesauce and beat in remaining sugar. Carefully fold applesauce into other bowl. Turn out into a 9 inch layer cakepan lined with wax paper or greased parchment paper on the bottom and buttered on the sides. Bake in a 350 degree oven for about 40 minutes or until cake springs back when lightly pressed with finger tips in center.
