Here's something that's easy, not overly expensive, and doesn't take long. I got it from a friend of mine, and thought I'd share it with you all.
Ingredients:
1 x block of Feta Cheese (or 'Greek Salad Cheese', it's the same damn thing!)
1 x small bag of Pine Nuts
Olive Oil
Optional mixed herbs to garnish/flavour to taste.
Pasta, fresh or dried.
Method:
Crumble the feta cheese into a blender. Add the pine nuts (as desired, I usually use about half the bag). Then liberally add olive oil. Probably about (using your fancy american measures) a cup to half-cup or so. Then blend that mother!
Blend until smooth.
Meanwhile, cook the pasta - fresh pasta is the best, but dried works just as well. This is especially good with spaghetti, but you can use any pasta shapes.
Once the pasta is cooked through, drain and return to the pan. Then add your sauce. The residual heat should be enough to melt it through and coat the pasta.
If you're going to season, now is as good a time as any.
Optionally, serve with Garlic Bread (such as ciabatta or baguette), or with a chunk of crusty bread of some kind to mop up the sauce.
