This is one of my favorite dishes, and it is pretty simple to make.
What you will need.
A grill, propane works, But I prefer to cook over wood.
Several logs of olive, or oak. I prefer using olive.
A chicken
six pack of canned beer.
crushed southwest chipotle.
Salt and pepper.
Vegetable oil.
Crushed cayenne pepper if you like a little spice.
And a cookie sheet.
You have to cook this bird low and slow.
So before you start prepping your bird, ya have to get your fire burning. Wait until the wood is almost nothing but coals before putting the bird on.
To prep the bird. First do a wet rub with the vegetable oil, then dry rub it with the salt pepper southwest chipotle and cayenne. Take a half-full can and shove it in the birds opening and stand it up like a tripod using the legs for support (you can actually buy a bracket made just for this.
Put the bird on the cookie sheet and set the cookie sheet with the bird on the grill. Putting some water on the cookie sheet will help to keep it from being ruined, and will help keep your bird moist. But instead of water I prefer to use beer to improve the flavour.
Cover the bird and let it cook low and slow. A three pound bird takes about an hour. Periodically check the bird, adding a little beer and some more seasoning on it. When the juices run clear when you poke it, and there is no pink meat left the bird is done.
