Ingredients:
6 Spring Onions
1/4 Lettuce
6 Chicken stock cubes
8 Mushrooms
4 Noodle nests
2 Bags of frozen precooked Chicken or 4 fresh Chicken Breasts
Salt
Lemon grass powder
Ginger Powder
Equipment:
Large pot
Chopping Knife
Chopping Board
Frying Pot
Wooden Spoon
Method:
Place noodle nests into a large pot and boil until soft.
Drain noodles and boil two more times.
Refill large pot with water and bring to the boil and add chicken stock cubes.
Fry off frozen chicken until defrosted and soft or fry off raw chicken until white.
Place cooked chicken into pot
Chop spring onions and mushrooms and fry until mushrooms are soft.
Add fried off mushrooms and Onions to large pot.
Chop and add lettuce to pot.
Bring soup back to the boil and then simmer for five minutes.
Season with Lemon grass and ginger powder and salt. (Don't forget to taste to suit)
