Confused about Cowboy Bebop's popularity

I mean no offense against Cowboy Bebop I thought it was cool and the OST was Seriously over the top in a good way. The only other ost I might've liked like that was Eureka 7. But I was actually a little bored because there was no real central storyline. I definitely like the ending and the beginning was interesting enough. The universe was very cool, so we're the characters [gotta Love Ed] but it's that missing storyline that erks me. Am I missing something?
